One of my favorite healthy alternative brownie recipes is something I learned from a nutrition in college. This recipe calls for just 2 simple ingredients. You could add other things to it as you please (such as chocolate chips, walnut, etc), but the base of the recipe is only two ingredients. This substitute gives added vitamins and minerals, and also a huge increase in fiber than the traditional brownie recipes.
-1 boxed Brownie mix (Preferably Ghiradelli’s)
-1 can Low Sodium Black Beans
Directions: Preheat the oven to 350 degrees. Puree the canned black beans in the blender or food processor. Pour the brownie mix into a bowl. Pour the pureed beans into the brownie mix and stir until just incorporated. Pour the brownie mixture into an 8x8 pan. Put the brownies into the oven and let it bake for 35 minutes or until a toothpick comes out clean.
You won’t even notice there are beans inside this brownie recipe. Let a friend or a family member have a piece and see if they can figure out the hidden ingredient.
